Harmonica's Unique Organic Honey Vinegar is made entirely from organic honey as a result of a two-stage, natural fermentation process. The organic honey is first turned into mead by adding water and leaven to the honey. Natural sugars feed the Saccharomyces cerevisiae bacteria which helps turn the water into alcohol (honey wine). The alcohol is then exposed at air and warm temperature. During this second stage of fermentation is the genesis of the Acetobacter which transforms the alcohol into acetic acid. Temperature and air control during the second fermentation stage are of great importance. Finally, organic honey is added to the honey vinegar for a sweet delicate taste. The production process is quite long but allows for the preservation of the precious nutritious qualities of the honey and the end result is a delicious, sweet and all natural vinegar.
